Peach Cobbler

Ingredients

Peach Filling

  • 1/4 cup dark brown sugar
  • 1/4 cup white sugar
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon cinammon
  • 3 pounds frozen peaches thawed
  • 1 teaspoon cornstarch dissolved in 1 tablespoon water
  • 1 lemon juiced

Biscuits

  • 2 cups all-purpose flour
  • 2 tablespoons dark brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon kosher salt
  • 3/4 cup unsalted butter cold
  • 1/4 cup mascarpone cheese
  • 2/3 cup whole milk

Instructions

  1. Preheat oven to 450 degrees.

  2. Remove peaches from bags, and let sit in the bowl until they are thawed and no longer frozen. Should take about 10-20 minutes.

  3. To make the peach filling: In a large bowl, stir together the brown sugar & white sugar, flour, cinnamon, and salt. 

  4. Add the thawed peaches to the mix and gently toss to coat. 

  5. Give the mixture a taste, and if you want to add more sugar or spices do so now.

  6. In a small bowl mix together the cornstarch, water and add the juice of 1 lemon to the mixture.

  7. Add cornstarch mixture to the peaches, and mix to incorporate

  8. Butter a 12 by 8-inch oval dish and add peach mixture to the pan.

To make the biscuits

  1. Combine flour, brown sugar, baking powder, salt and baking soda. Whisk until well combined

  2. Add your cubed cold butter to the bowl. Don't be afraid to get your hands dirty! You want to combine this until you have a crumbly mixture. Don't worry small chunks of butter is a good thing.

  3. Add the mascarpone cheese to the mixture, using your hands to combine the cheese into the mixture gently.

  4. Pour in the milk and use a wooden spoon until the dough comes together.

  5. Take spoonfuls of the dough and drop on top of the peach mixture. (If desired roll each dough ball in brown sugar & cinnamon for extra goodness)

  6. Place in oven and reduce the oven temperature to 350 degrees F. Bake uncovered for 30-40 minutes. When biscuits are golden brown, the cobbler is ready to be removed.

  7. Let cobbler sit for 15 minutes before serving. Serve with vanilla ice cream and enjoy!
