Thai Red Curry

This delicious authentic Red Chicken Curry is super easy to make a one pot wonder in less than 30 minutes. So do your taste buds a favor and let them experience the best curry in town!

Ingredients

  • 1 tbsp olive oi
  • 2 cloves garlic minced
  • 3 chicken breasts boneless and skinless and cut into small
  • 1 can (13.5 ococonut milk
  • 2 tbsp to 3 Thai red curry paste
  • ¾ cup chicken broth* *If you don't have chicken broth in the house, boil 1 cup of water and add a bouillon cube and measure this out and use it for the chicken broth!
  • 2 bell peppers cut into strips
  • 1/2 pieces head of broccoli chopped into bite size
  • 2 tsp sugar
  • salt and pepper to tast

Instructions

  1. Place olive oil in a deep pot on medium heat. Once the pot is heated up add the garlic and let cook for about 30 seconds until it gets fragrant.

  2. Add the cubed chicken breasts(you can season lightly with salt, pepper, garlic & onion powder if you like)  and cook for 5-8 minutes until chicken is no longer pink.

  3. Add coconut milk, red curry paste, chicken broth, peppers, broccoli, and sugar. Bring the mixture to a boil reduce heat and let simmer for 10 minutes. Add salt and pepper to taste and remove from heat.

  4. Serve with jasmine rice, and enjoy!
