This delicious authentic Red Chicken Curry is super easy to make a one pot wonder in less than 30 minutes. So do your taste buds a favor and let them experience the best curry in town!
Place olive oil in a deep pot on medium heat. Once the pot is heated up add the garlic and let cook for about 30 seconds until it gets fragrant.
Add the cubed chicken breasts(you can season lightly with salt, pepper, garlic & onion powder if you like) and cook for 5-8 minutes until chicken is no longer pink.
Add coconut milk, red curry paste, chicken broth, peppers, broccoli, and sugar. Bring the mixture to a boil reduce heat and let simmer for 10 minutes. Add salt and pepper to taste and remove from heat.
Serve with jasmine rice, and enjoy!
