Fried Cauliflower Rice

A delicious alternative to fried rice. You won't even be able to tell that this isn't rice!

Ingredients

  • 1 head of cauliflower
  • 4-5 carrots chopped into bite sized pieces
  • 1 yellow onion
  • 1/2 cup frozen peas
  • 2 eggs
  • 1 tbsp Sesame Oil

For the Sauce (You will not use all of the sauce)

  • 1/4 cup Soy Sauce
  • 1 tbsp Brown Sugar
  • few pinches of pepper or red pepper flakes

Instructions

  1. Cut up your cauliflower into halves and use a box grater to "rice" the cauliflower. You can also place this in a food processor to make this process easy! As you grate the cauliflower this will start to resemble rice.

  2. In a medium-sized pan drizzle in the sesame oil and next add in the onion, carrots, and peas. Cook until tender this should take 2-3 mins.

  3. While the veggies are cooking start to prepare the sauce. Whisk together the brown sugar, soy sauce, and pepper. Set aside.

  4. While the veggies are cooking add the eggs to the other side of the pan, and start to scramble to cook. Combine the eggs and veggie mixture in the pan.

  5. Add to the pan the cauliflower mixture, and slowly add in 2-3 tablespoons of the sauce. I did not end up using all my sauce so make sure you are tasting along the way.
