Sweet Potato and Butternut Squash Soup

Ingredients

  • 2 cups butternut squash cut into cubes
  • 2 small sweet potatoes cut into cubes
  • 3 cloves of garlic sliced
  • 2-3 cups vegetable broth I used low sodium, but choose your preference
  • 1 tsp nutmeg
  • 2 tsp fresh ginger
  • 2 tbsp butter
  • 4 tbsp mascarpone cheese
  • salt to your taste level
  • pepper to your taste level
  • brown sugar to your taste level

Instructions

  1. Add the squash, sweet potatoes, garlic, ginger and broth in the crockpot. Cook on high for 2 hours, until soft and cooked through

  2. I do not have an immersion blender, so I transfer everything to my blender. If you have one, you can leave it all in your crockpot. Add the remaining seasons, butter and mascarpone cheese and puree until smooth. Adjust the seasonings to your taste level.

  3. Serve immediately and enjoy!
