As the temperature starts to drop, nothing warms me up more than some good comfort food. This week I decided to dive into my spice cabinet and pull up some of the spices I picked up in Thailand. Last May me and a few of my girlfriends (9 to be exact) made our way to Thailand for a 9-day trip! Just to give you guys a quick recap if you’re thinking about going to Thailand, you definitely should. I didn’t expect to fall in LOVE with the food, but I did. I wanted mango and sticky rice at the end of every meal, and I’m very sad I can’t start my day with a Thai Iced Coffee(if you haven’t ever had it you can recreate it; coffee + condensed milk–that simple).
Thailand is so beautiful and has so much culture for you to see. It is also a very affordable vacation, and I was able to get a great price on my ticket. (I believe it was around 800 which is a steal) If you know the exact dates you would like to travel I would track your flights with the mobile app called Hopper. This app has changed the way I travel and saved me tons of money! It tells you the best time to travel and alerts you when prices drop for your trips.
When you arrive in Thailand expect to get some meals for $10 or less, and do yourself a favor and treat yourself to a SPA! Make sure you splurge on this too. I must admit I took the cheap way the first time around and got a 65 minute massage for about 20 bucks, and let me just say that was an interesting experience. Spend the $150 and really treat yourself you won’t regret it.
In Bangkok, we visited one of the most popular temples Wat Phra That Doi Suthep. Ladies, if you visit please make sure that you are completely covered. A maxi dress with a scarf over the shoulders works as well.
On our trip, we were able to hit three cities Bangkok, Chang Mai, and Phuket. My favorite between the tree cities is a tie between Chang Mai and Phuket! Chang Mai reminds me of a quaint cute little city. We stayed in a small bed and breakfast since there were no major hotels here, and had amazing meals prepared in authentic restaurants. We also were able to visit elephants at Blue Elephant Park in their natural habit. It was great to get to play with the elephants, bath them and ride them through the park. I was very nervous at first since the Elephants had no harness attached, We later learned that harness hurt the elephants, and it’s better to ride without them. Our group had no issues with this and the elephants were very sweet.
Another favorite part of my trip was the cooking school we visited in Chang Mai. My group and I went to Arroy Arroy and were taught the basics of Thai Cuisine. I would definitely encourage you to add a cooking class to your itinerary if you plan to go. Our class was so much fun we made 3 dishes plus a dessert and started the day by going to the market to learn more about the ingredients. In class, we made a traditional red curry which is very simple, and I was able to recreate!
This is a one pot wonder and can be made in 30 minutes! You can make yours as spicy as you want I suggest 1 tablespoon of curry paste, but do what’s right for you. I served mine with plain Jasmine rice, but next time I will use coconut rice. Let me know if you were able to recreate this meal and what you think about it!

Cooking up That Work Vol.1
Thai Red Curry
This delicious authentic Red Chicken Curry is super easy to make a one pot wonder in less than 30 minutes. So do your taste buds a favor and let them experience the best curry in town!
Ingredients
- 1 tbsp olive oi
- 2 cloves garlic minced
- 3 chicken breasts boneless and skinless and cut into small
- 1 can (13.5 ococonut milk
- 2 tbsp to 3 Thai red curry paste
- ¾ cup chicken broth* *If you don't have chicken broth in the house, boil 1 cup of water and add a bouillon cube and measure this out and use it for the chicken broth!
- 2 bell peppers cut into strips
- 1/2 pieces head of broccoli chopped into bite size
- 2 tsp sugar
- salt and pepper to tast
Instructions

Place olive oil in a deep pot on medium heat. Once the pot is heated up add the garlic and let cook for about 30 seconds until it gets fragrant.

Add the cubed chicken breasts(you can season lightly with salt, pepper, garlic & onion powder if you like) and cook for 5-8 minutes until chicken is no longer pink.

Add coconut milk, red curry paste, chicken broth, peppers, broccoli, and sugar. Bring the mixture to a boil reduce heat and let simmer for 10 minutes. Add salt and pepper to taste and remove from heat.

Serve with jasmine rice, and enjoy!
